Ingredients

  • 1 eggplant
  • 2 large red capsicums
  • 1 brown onion, halved
  • 1 clove garlic
  • 3 tomatoes, quartered
  • 100 grams red wine vinegar
  • 2 tablespoons brown sugar
  • 4 pieces dried apricots, chopped
  • 1 dash Balsamic Vinegar.

Recipe's preparation

    The Chutney

  1. Cut eggplant into 1 cm cubes, salt (about a good 2 tablespoons) and leave for 15-30 minutes while you do the other prep.

    Remove seeds from capsicums and chop into 1 cm squares (or thin strips)

     

    Place garlic and onions into TM bowl, chop 5 secs, Speed 5

    Add 50g olive oil

    Saute 2 mins, 100 degrees, Speed 2, MC off

     

     

     

    Then - 

    Add tomatoes, chop 3 secs, Speed 4

     

     

     

     

     

    Once you have done this, rinse the eggplant in a colander throroughly .

    Tip into Thermomix with rest of ingredients - it will be full to the top - don't worry it will cook down.

    Optional – add pepper to taste (do not add much salt as eggplant has been salted)

    Cook 45 mins, 100 degrees, Speed 2 with the basket on top to prevent splashing and let the steam out.

    Cool.

  3. Warm your jars - fill the sink with hot tap water and put them in to rinse and dry on teatowel.

    Fill the jars with hot relish using a jam funnel. Take my advice - i have had it all over my kitchen bench and floor - am going to buy one tomorrow! it is too chunky to use a normal funnel I use for lemon butter etc....

    Put the lid on and rinse in the sink of hot water and leave sitting in the hot water up to halfway, so it will stay hot and therefore vacuum seal each one.

    Cool and label!

    Great as gifts or for your pantry!

    Fantastic! I had an abundance of eggplant and green capsicum and this was the perfect use for them. This would make a tasty pasta sauce too.

    I added some chilli, and I didn't have fresh tomato so I used a tin and it turned out great. Very easy too

    Made this yesterday , really nice, it made 2  large jars and one small.  I have half the eggplant left (it was a monster!) so am making again, It won't last long in our house!
