Ingredients
Ricotta, Pea and Dill Dip
- 150 grams frozen peas
- 700 grams water
- 2 stalks dill, leaves only
- 2 spring onions
- 250 grams fresh ricotta cheese (from deli, not in tub)
- 5 tablespoons lemon juice
- salt and pepper to taste
- 2 stalks fresh mint, small heads only., Slice very finely by hand.

1. Add water to TM bowl.
2. Add frozen peas to TM basket and insert into TM bowl.
3. Cook on Varoma, 10 mins at speed 3.
4. Remove basket and drop into some cold water to cool peas and stop the cooking process. Drain and put aside.
5. Rinse TM bowl with cold water and dry.
6. Add dill and one spring onion to TM bowl and turbo 3 times for 1 second. Scrape down sides.
7. Add cooled peas and mix on speed 3 for 5 seconds.
8. Add ricotta, lemon juice, mint, salt and pepper. Mix "Counter-clockwise operation" on speed 3 for 12 seconds.
9. Finely slice remaining spring onion and sprinkle over top when served.
10. Serve with Ciabatta bread or any savory biscuits of choice. Enjoy!

Tip
This could be made with fresh peas and cooking time may vary slightly. Pre-packaged ricotta could be used but fresh gives a much creamier texture and taste.
