Rustic Fig and Tomato pickle
- 400 g tomatoes, Diced
- 500 g Fresh figs, Diced
- 2 cloves fresh garlic, Minced
- 115 g brown sugar
- 2 Diced onions
- 60 g malt vinegar
- 2 level teaspoons chilli, Minced
- 220 g Frozen vegs
- 15 g fresh ginger, Minced
- 15 g Mustard seeds
- 60 g balsamic vinegar

- Add all ingredients to jug.
cook 20 mins reverse sp 1 Varoma
Place simmering basket on lid to reduce splatter
When complete, 20s sp2 .
This is a very forgiving recipe. I prefer the chunky type to serve with cold meats etc, but if you wants a smoother texture mix on sp2-3 until satisfied with look.
Spoon into 2 medium jars, tighten lid and turn upside down to seal.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
