Lemon Drizzle Cake ( Mary Berry)
- 175 g caster sugar
- 175 g SRFlour
- 175 g softened butter
- 3 eggs
- 3/4 level tsp baking powder
- Zest 1 lemon
- 100 g Granulated sugar
- juice 1 lemon

- preheat oven 180c
Zest lemon peel. Sp 8 10 sec.
beat together zest, castor sugar,flour,butter,eggs and baking powder. Until smooth. 20 sec sp 2
pour into loaf tin, I prefer small Bundt tin,either will do.
bake about 40 mins or until cake pulls away from sides of tin.
while cake is still warm make the drizzle.
mix lemon juice and granulated sugar and pour over warm cake
Tip
This is very forgiving mix, I often halve the miz and bake in small Bundt tin as shown in photo.
if using small tin, bake time will be approx 25 mins
