Ingredients
Plum Chutney
- 1 clove garlic, peeled
- 1 onion, Quartered
- 2 centimetre ginger knob, skinned
- 650 grams plums, Halved and stones removed
- 1 Granny Smith Apple, Quartered
- 75 grams dried aprocots
- 1 - 2 small chillis
- 2 teaspoon salt
- 350 grams rapadura or brown sugar
- 2 tablespoon apple cider vinegar

1 - Place garlic, ginger, onion and chilli into the bowl and chop 3 seconds, speed 7
2 - Add Plums, Apple, apricot and chop 8 seconds, speed 5
3 - Scrape down sides
4 - Add sugar, salt and vinegar and mix 2 seconds, speed 4
5 - Cook for 15 minutes, 100C "Counter-clockwise operation" , speed 2
6 - Scrape down sides
7 - Cook for a further 15 minutes, 90 "Counter-clockwise operation" , speed 2
(I took the measuring cup off halfway through step 7 to evaporate a liquid a little more)
8 - Pour into steralized jars (mine were 370G jars)
Tip
You could add more chilli if you wanted this spicier.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Made this reciepe after finding other plum chutney recepies a bit too sweet, this was such a satisfying taste. I only used half of 1 deseeded chilli which produced just a pleasant zing after eating something with the chutney on it. Am making a 2nd batch so I can have a jar every month for 2022. It was quite runny but we always sort that by adding agar from seeweed to reach the desired texture. Thanks for the reciepe.
Great recipe. Made this now 4 times. Added another little chilli and more ginger. Soo yummy with turkey for Christmas. I don’t store in fridge as bottles sealed with a pop.
This is fantastic - it was a great way to be able to use up a whole pile of plums I was given. Only concern is there isn't enough vinegar in it to safely water bath is so I will have to store it all in the fridge
I used dried mango instead of apricots and red wine vinegar instead of apple cider vinegar - it was an amazing result.
