Ingredients
Sweet Mustard Pickles
- 1000 g Green Tomatoes, Sliced or use the Thermomix cutter on thick setting
- 600 g onions, Sliced or use the Thermomix cutter on thick setting
- 100 g salt
- 600 g white vinegar
- 300 g sugar
- 50 g Corn Flour
- 1 tablespoon mustard powder
- 1 teaspoon ground turmeric
- 0.25 teaspoon curry powder
- 0.25 teaspoon all spice

- Slice tomatoes and onions (or use the cutter to slice on thick setting). Place into large bowl or container, sprinkle salt and mix thru. Cover and sit overnight or in fridge for up to 48 hours
- Drain off liquid, squeeze out excess. Add tomatoe and onion mix into bowl
- Add 400g vinegar. Cook 15mins 100°C, speed "Gentle stir setting" , "Counter-clockwise operation" MC out
- To spare bowl, add remaining 200g vinegar, corn flour, sugar and spices
- Mix 20 seconds, speed 3.5
- Scrape down sides with spatula. Mix again 10 seconds, speed 3.5
- Pour into tomato onion mix and cook for further 20 mins, 100°C, speed "Gentle stir setting" , "Counter-clockwise operation" , MC out
- Pour into sterilised jars and seal. Allow to sit for 2-3 weeks before opening

Tip
Having a spare bowl allows blending the sauce while tomatoes and onion hot in one bowl.
Makes 3 and a half pasta sauce size jars.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
