Ingredients

  • 4 cloves garlic, skins on
  • 1 tbsp Mustard seeds
  • 1 tbsp coriander seed
  • 1 tbsp Fennel seed
  • 1 tbsp ground ginger
  • 1/2 tbsp salt
  • 2 brown onions, halved
  • 1 Jalepeno Pepper
  • 1 green capsicum
  • 200 grams cherry tomatoes
  • 100 grams sultanas or rasins
  • 1 tsp red pepper flakes
  • 200 grams apple cider vinegar
  • 300 grams raw sugar
  • 1 aubergine, diced into small squares

Recipe's preparation

  1. Roast the garlic in the skins for 20 minutes in a moderate oven. (note: Roasting the garlic gives a softer, rounder flavour.  If you decide to just add garlic without roasting, then I suggest only 2 cloves).  Once roasted and cooled, squeeze the flesh out of the skins and add to TM bowl with the rest of the ingredients.

     

    While the garlic is roasting, add mustard seeds, cordiander seeds and fennel seeds to TM bowl. 110 degrees, 4 minutes, speed 1.  Mill Speed 9 for 5 seconds. (I think it is nice with the spices fairly whole.. this just breaks them up a little to release their flavour)

     

    Add onlon,capsicum, and jalepeno. to the TM Bowl. Chop speed 4 for 5 seconds.  Add cherry tomatoes, chop speed 4, 3 seconds.

     

    Add all of the rest of the ingredients, except aubergine, to TM Bowl with MC off.  100 degrees, 60 minutes, speed 1 (reverse).

     

    Add aubergine cubes.  Turn up to Varoma temp for 15 more minutes, speed 1 (reverse).  Place simmering basket on top to catch spills.

     

    If consistency appears too runny for your liking, increase time by 5 minutes at time and check again.  Pour into sterilzed jars.

     

    Should keep for about a month in the fridge, unless you are able to properly seal the jars using a pressure canner.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
