Recipe's preparation

  1. Place butter and buttermilk into the freezer for 10 minutes to get very cold. Preheat oven to 210 degrees C.

    Place dry ingredients into TM Bowl.  Speed 4, 3 seconds.

     

    Put butter into TM Bowl.  Speed 4, 2 seconds.  Then repeat.  (stop when butter appears like small peas in the flour mixture)

    Put Buttermilk into TM Bowl. Speed 3, 5 seconds (until just comes together into a dough).

     

    Turn dough out onto a floured surface and bring together into a rough square shape.  Roll out to a rectangle about 1/2 inch thick, then fold over several times to create layers. (do this quickly and try not to handle too much)

     

    Lightly press out with your fingers until the dough is about 3/4 inch tall.  Cut out into round shapes using a cutter.

    Place side by side onto a baking sheet lined with baking parchment.

    Brush the tops with the reserved tbsp milk.

    Bake for 13-15 minutes until flaky and golden brown.

     

Tip

Note: these are like soft scones, not the type of biscuits that are like cookies here in Australia.

Warning: Highly addictive! (But then of course I'm biased as I was brought up on them).

Cut in half and slather with butter and jam, or eat with 'sausage gravy' for a traditional southern breakfast!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
