Ingredients

Zucchini Pickle

  • 500 grams zucchini
  • 1 Large Brown Onion
  • 1 red capsicum
  • 1 level tablespoon salt
  • 1 Cup of Sugar
  • 2 Cups vinegar
  • 1 level teaspoon ground tumeric
  • 1.5 tablespoons Corn Flour
  • 1 level teaspoon mustard powder
  • Small amount extra vinegar

Recipe's preparation

    Zucchini Pickle
  1. Chop zucchini and capsicum into large chunks.  Peel and halve onion.

    Please note: if you prefer a chunkier version, chop on speed 4 or 5. Play around with the recipe to get your preferred consistency. If it's too runny for your liking, add a little more cornflour. 

    Place onion in TM bowl.  Chop approximately 3 seconds speed 7.  Set aside in large Thermoserver.

    Place zucchini into TM bowl.  Chop approxiately 3 seconds speed 7 (you want to keep it with chunks in it).  Add to Thermoserver

    Place capsicum into TM bowl.  Chop 1-2 seconds speed 7 (again try to keep chunky) Add to Thermoserver.

    Sprinkle vegetables with salt.  Leave to stand for at least 3 hours.

    After 3 hours add all vegetables to TM bowl. 

    While pickles are cooking start sterilising your jars and lids - in boiling water for at least 10 minutes.

    Add all remaining ingreidents EXCEPT corn flour and extra vinegar.

    Cook 20 minutes 100 degrees Counter-clockwise operation"Counter-clockwise operation" 1

    Mix extra vinegar with corn flour to make a runny paste.  Add to TM bowl.  

    Cook minutes 10 minutes 75 degrees Counter-clockwise operation"Counter-clockwise operation"

    Pour into sterilised jars.  Will keep for at least 1 year. 

     

Tip

Tastes great on hamburgers or buttered toast.  Also perfect with some biscuits, cheese and pickled onions.

    Thanks Naz - first time using this recipe and it tastes great! used red cabbage which obviously changed the colour Smile - but pickle is pickle!

    Great recipes, made 5 regular sized jars. Looks like this is based on the Sally Wise recipe. Not sure if the vinegar should have been halved though, if the other recipe was used as a guide.

    Thanks for this recipe, handy for using up some Zucchini from the garden. I added a lot more corn flour, probably around 6 tablespoons and drained some of the juice from the vegetables. I'm really happy with how it turned out.

    Really happy with this recepie, I did make a few changes, using mustard seeds instead of powder, celery instead of capsicum and adding 1/2 teaspoon of carraway seeds. Great flavour and consistency, will definetly do this again.
