Ingredients

Thai Chicken

  • 2 Chicen breast fillets, Approx.600g
  • 2 tablespoons Sweet chilli sauce
  • 6 sprigs Fresh Corriander

Salad and dressing

  • 1 carrot, julienned
  • 1 Lebanese cucumber, julienned
  • 1 spring onion, diced
  • 1 red chilli, deseeded and diced
  • 1/2 cups of fresh bean shoots
  • 40 g lime juice
  • 4 sprigs Fresh Corriander
  • 2 cm fresh ginger, peeled
  • 3 level teaspoons olive oil
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar

Recipe's preparation

    Thai chicken and salad rolls
  1. Place 1litre of water in TM bowl.  Add 6 whole sprigs of corriander to the water.

    Place whole chicken breast fillets into varoma dish. Dress with sweet chilli sauce.

    Cook 20-30 minutes ( cooking time will depend on the size of your fillets)  Varoma, speed 1.

    Check that chicken is cooked through.  Remove and set aside to cool.

    Wash and dry TM bowl.

  2. Add ginger and corriander to TM bowl.  Chop 4 seconds, speed 7.  Scrape down sides of bowl.

    Add lime juice, olive oil, fish sauce and brown sugar.  Blend 5 seconds, speed 4.

    Add all remaining ingredients. Blend 10 seconds Counter-clockwise operation"Counter-clockwise operation" speed 4 to coat veggies in the dressing.

    Remove from TM bowl and allow to stand for up to 30 minutes if you have time so that flavours go into the veggies.  (It's okay to use straight away as well)

     

  3. Slice chicken into thick slices.  Place into your choice of bread roll or wrap.  Add salad ingredients.  Enjoy !

If you have time or desire you can also make your own bread rolls.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
