Ingredients

Salsa

  • 6 Large Tomatoes, Halved
  • 1 red chilli
  • 1 small red onion, Halved
  • 6-8 Sprigs Coriander or Parsley
  • 2 level teaspoons Himalayan salt
  • 1 level teaspoon cumin seeds
  • Juice of 1 lime

Recipe's preparation

  1. Add chilli and coriander (or parsley if you're not a fan of coriander) to bowl. Chop 5secs/Sp8

  2. Add tomatoes and onion to bowl. Turbo x3-5 times until you get the consistency you're wanting. Scrape down sides.

  3. Add salt, lime juice and cumin seeds. Combine 10secs/Sp 3

  4. Place into a sterile jar (make sure there is at least 3cm between salsa and top of jar, it may bubble a little as it ferments)

  5. Put jar into a dark place undisturbed for 3-5 days. Then pop into the fridge.

Tip

This salsa is a great accompaniment to all mexican dishes. It goes well on crackers, a sandwich or wrap. It would be great for the kids to take for lunch, just ammend the chilli factor to suit.

    You can if you like but once it's in the fridge it slows the fermenting right down so there shouldnt be any need. Make sure there is a gap between your salsa and the top of the jar or it'll fizz out the side

    So yum! thankful it lasts in the fridge coz i havent gotten around to eating it until now. SO delicious. and so easy to make.

    Sounds great - mine is fermenting now.  Is there any risk of the jar exploding ?  Should I open it once in a while to let out the pressure ?

    So easy!! waiting for it to ferment now. tastes good already. i added 1 tsp chilli flakes as i didn't have a chilli and used a kilo of tomatoes
