Ingredients

Soup

  • 5 sticks Celery, Quartered
  • 2 carrots, Quartered
  • 1/2 Cup Broccoli Stem, Cubed
  • 1 cup pumpkin, Cubed
  • 1 Capsicum, Quartered
  • 1 zucchini, Quartered
  • 1 onion, Halved
  • 3 chicken thighs, 2cm Cube
  • 1 Dash Oil
  • 3 cloves garlic
  • 1 2cm piece ginger
  • 1 2cm piece Tumeric
  • 1 chilli, Halved
  • 1 Cup Peas and Corn
  • 2 Cups Baby Spinach
  • 2 heaped tablespoons Stock Concentrate
  • 1300 grams water

Recipe's preparation

  1. Chop Celery and Carrot 8secs/Sp 4. Add to Varoma.

  2. Chop Broccoli and Pumpkin 8secs/Sp 4. Add to Varoma

  3. Chop Capsicum and Zucchini 5secs/Sp 4. Add to Varoma.

  4. Add peas and corn to Varoma also. Move everything to the outside to make a channel for the steam above the hole in the bowl lid.

  5. Chop onion, garlic, ginger, tumeric and chilli 3secs/Sp 8. Add oil and saute 3min/100/Sp 2

  6. Add chicken. Saute 3min/100/Rev/Sp 2

  7. Add stock concentrate and water. Place Varoma on top of bowl and cook 20mins/Varoma/Rev/Sp 2.

  8. Add baby spinach to a LARGE serving dish. Top with Varoma veg then pour over soup.

    A good way to use up veg, & very healthy, but neither myself, or husband liked it. The veg was still hard, & it only tasted like vegetable stock mixed with water. It was lacking flavour. Doubt i'll worry to make this one again. Puzzled

    I was a bit skeptical about putting veggies in the varoma, but... it works beautifully. Also makes a nice substantial amount this way. Substituted a few veg that I didn't have, served with noodles and a good squeeze of lemon juice. Just lovely - thanks !!

    Yummy healthy soup! Love the aroma from the garlic, ginger and tumeric which also give an amazing flavour! Love that the veges are steamed as they retain lots of their individual flavours as well as colours (which also means vitamins and minerals). I halved the recipe which still got 3-4 good sized meal portions.

    This soup is amazing. Not only does it make a large amount but it is soooo tasty. This in now one of my favourite soups. I have made it lots and everyone who has tried it loves it.     A stroke of genius to steam the vegies in the Varoma!  tmrc_emoticons.)  There are two major benefits in this.  Firstly, the vegies retain their shape and texture.  Secondly, it allows a much larger batch of soup to be made.  My only criticism is that the ingredients aren't in ThermoSpeak.  Next time I make it I'll convert this wonderful recipe into weights rather than the nebulous 'one of this two of that' and clarify the best sizes for consistent chopping.  Thanx  LeeLee81!

    Just whipped this up this morning for dinner tonight and love it! So yummy and love that the veggies are steamed in the varoma, it makes so much! There were a few veggies I didnt have and it's still delicious. Will definately make again! Thank you!  tmrc_emoticons.)
