Recipe's preparation

    PLEASE READ THE WHOLE RECIPE (INCLUDING NOTES AND TIPS) BEFORE STARTING :)
  1. NO BUTTERFLY OR STEAMER BASKET IS REQUIRED.

     Place chopped potatoes straight into bowl with milk.

     

  2. Cook for 15 minutes, 100 degrees, speed 1.  By this time the potatoes will be soft and mushy.  If they are not cooked enough you will end up with a lumpy mash.  CHECK THE POTATOES ARE COOKED THOROUGHLY AT THIS POINT.  If chopped too big, or not cooked enough, add a bit more cooking time.

     

  3. Add butter and salt and mash for 20-30 seconds MAXIMUM, (meaning, do not mash for longer than 30 seconds), speed 3 until desired consistency is achieved.  DO NOT OVERWHIP as you will end up with a claggy consistency.

     

    NOTE the "mashing time" will depend on the size you dice your potatoes and how well cooked/mushy they are.  I start with 20 seconds, check the consistency, and if still lumpy continue to 30 seconds. 

     

Tip

This is a half quantity for 2-3 people. If you want a larger portion then double it to use 1000g potatoes and 250g milk, and cook for 20-25 minutes.

I use this method with all types of potatoes and have never failed.

For a creamier, more indulgent mash, use half cream, half milk, or all cream instead of milk.

Parmesan cheese and fresh chives can be added for extra flavour.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Mark Boys: Yes, but Mark, if you decide to cook more than 1500g of spuds, in your TM31 you'll need to do it in batches.

    Today I have halved the recipe and reduced the speed to 1 and the cook time by 20% BUT it still needs the full 15 minutes. It looks lumpy but it isn't.

    Easy to make. We are dairy free so I made a double batch using 200g coconut cream and 50g water. And i used salt, pepper and corriander to flavour. Absolutely fantastic recipe. For others who have asked, i have a tm5 and used my lid. I mixed mine at sp3.5 because the larger volume didnt seem to be incorporating the top half when 'mashing'. The second batch i made i used 200g of carrot and 800g potato and it was definitely my favourite.
