Red Cabbage
- 500 gram red cabbage, chopped roughly
- 2 apples, quartered
- 1 red onion, halved
- 40 gram oil, any preference
- 40 gram balsamic vinegar
- 1 level tsp salt
- 1 dash black pepper, freshly ground
- 1 tablespoons red berry jam
- 1 pinches caraway seeds, optional

- 1. Chop up 100gr of red cabbage at a time for 8 sec/ speed 4 and transfer in a bowl, repeat.
2. add apples and onions, chop 8 sec/ speed 4 and leave in mixing bowl
3. add red cabbage and oil and steam for 7 mins/ varoma/"Counter-clockwise operation" / speed 2
4. add all other ingredients and cook again for 15/20mins / 100 degrees/ "Counter-clockwise operation" / speed 2
Preparation
Tip
If you have available 1 tablespoon duck fat instead of the oil... the recipe becomes Master class material
The apple pieces are so small, they disintegrate during the cooking.
Eat as a side dish with meat and potatoes or bread dumplings.
Otherwise also great for storing for later use. Let it cool and transfer into sealable container/glasses.

The family really enjoyed this one. The flavour is on par with the traditional cooking methods. I used 'Cranberry sauce' as that's what I had & shredded the cabbage by hand as this is what I prefer. I will definately do this recipe again.
Hello- just wondering what you use for the red berry jam- is is cranberry, strawberry or is it sold as red berry jam?

Used goose fat and half balsamic vinegar and half red wine vinegar since I ran out of balsamic. Omitted the Jam.... was delicious! I thinly shredded the cabbage rather than chop it in the thermomix, just out of personal preference. Adding this to my recipe book thanks!
This was so delicious! I had a big red cabbage and had put with a few Asian dishes but was looking for something else. I was a little skeptical that it would be nice when I read you add jam but wow this is so good! Thank you!

Delicious . Thank you! I used 30 gm oil, half apple cider vinegar and half balsamic vinegar. Didn’t have jam, so substituted cranberry sauce. This Oma loved it!
ActLucy: indeed I never figured out why they used to cook it so long. Was the Kraut much tougher in the past?
