Ingredients

1/3 cup Fine Grit Bourghal

  • 1/3cup --- Borghal (Fine Grit)
  • 1cup --- water

2 bunches of fresh Parsley

1/3 – ½ bunch fresh Mint

3 cloves garlic

4-5 whole fresh tomatoes

1 lebanese cucumber

¼ red onion

1 tablespoon olive oil

Juice and zest of 1-2 lemon to own taste

Recipe's preparation

    Chopping herbs and mixing salad
  1. Soak 1/3 cup of Bourghal with 1 cup of water for 30 mins then rinse

    Chop Parsley, Mint and Garlic in batches 3 seconds on speed 7 and tip into salad bowl

    Cut tomatoes in quarters and cucumber in 3 pieces and chop for 6 seconds on speed 4. Tip into salad bowl

    Chop red onion for 4 seconds on speed 7 tip into salad bowl

    Add rinsed Bourghal, lemon zest and juice and olive oil and toss through in salad bowl or put all in Thermomix bowl for 20-30 seconds on speed 1

     

    Drain excess liquid off and serve. Okay in fridge for 48 hours if excess liquid drained

    I made this tonight using pearl couscous (that’s all I had on hand). I put the salad into the Thermo basket to drain a bit. Served it with lamb meatballs from the freezer, flat breads, yoghurt and avo (no hummus) Delish. Really tasty thanks

    This was tasty! I didnt drain it and I just added a whole cup of bourghal and that soaked up the liquid and flavour nicely, not need for exta water then! a little salt and pepper too. Thank you

    Such a great recipe !
    Mum Lebanese and this sure was delish! came up so quick and easy! Everyone loved it!

    I tweaked the recipe a tad, I didn't add
    Any cucumber, added 1 whole red onion !

    Delicious! Added a little extra burghal and did Viv's tip to reduce the liquid. This will be our go to.

    Viv's secret! Tomato, cucumber,onion after chopping put in a separate bowl sprinkle with 1 teaspoon of salt. Sit for 10 minutes, drain liquid down the sink. add to the salad. This gives a more intence flavour & the tabouli won't go soggy as the fluid is reduced.
