Ingredients

Soup

  • 1 clove garlic
  • 1 chilli
  • 2.5 cm ginger
  • 1 stalk lemon grass, fresh
  • 15 g corrander
  • 3 Kaffir lime leaf
  • 1 carrot, julienne
  • 350 g lean Beef, cut into strips
  • 15 g soy sauce
  • 15 g Worcestershire sauce
  • salt
  • pepper
  • 1.5 l beef stock
  • 2 stalk Celery, sliced
  • 1/2 onion
  • 200 g egg noodle nests

Recipe's preparation

    Meat
  1. Marinate beef strips in soy sauce, Worcestershire sauce, salt and pepper while preparing rest of soup

  2. Soup
  3. Garlic, Chilli, ginger & corriander stalks (put leaves aside for garnish) into bowl and chop (10s speed 9)

  4. Add stock and bring to boil (3 mins speed 2)

    Once on the boil reduce heat to 80deg (10m speed 2) and add lemon grass & kaffir leaves

    Remove lemongrass and kaffir leaves

     

  5. Machine into reverse

    Add beef, carrot & celery, continue cooking (3m speed 2)

    Add noodles (3m speed 2)

  6. Serve with chopped corriander leaves

    I quite liked this soup - which resembles more of a broth. Its hot and spicy, but very flavoursome. I didnt do the noodles as simply forget them, but think they would be a worthy addition. I did need to double the step when i added the meat though -  3m just wasnt long enough i didnt feel. Its definitely a warm one, but rather nice.
