Ingredients

Cauliflower, Bacon and Parmesan Soup

  • 4-6 cloves garlic
  • 50 grams spring onion
  • 30 grams Butter
  • 2 & 1/2 tbsp plain flour
  • 2 tsp chicken stock
  • 1/2 tsp salt
  • 1/2 tsp pepper, ground
  • 550 grams Boiling water
  • 600 grams cauliflower florets
  • 250 grams potato, diced
  • 750 grams Milk
  • 150 grams bacon, chopped finely
  • 40 grams Parmesan cheese, cut into small cubes

Recipe's preparation

  1. Place the parmesan cheese cubes into the bowl. Grate parmesan for 5 seconds on speed 8. Remove from the bowel and set aside.
  2. Add the garlic and spring onions into the bowl. Chop ingredients for 3 seconds on speed 7. Scrape down the sides of the bowl and chop again for 2 seconds on speed 7.
  3. Add the butter to the bowl. Saute for 2 minutesand 30 seconds at 100 degrees on speed 2.
  4. Add the plain flour, chicken stock, salt, pepper and boiling water. Stir for 3 minutesat 100 degrees on speed 2.
  5. Add cauliflower florets and potato. Mix for 20 minutes at 100 degrees on speed 1.
  6. Puree ingredients for 45 seconds, gradually increasing the speed from speed 1-7.
  7. Add milk, bacon and grated parmesan cheese. Cook for 10 minutes at 100 degrees on Counter-clockwise operation"Counter-clockwise operation" speed 2, until the parmesan cheese has melted.
  8. Optional: Garnish with finely chopped spring onions and serve while hot.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
