Ingredients

Soup

  • 50 g Parmesan cheese
  • 1/2 brown onion
  • 3-4 pieces Shortcut Bacon, roughly chopped
  • 2 cloves garlic
  • 20 g Butter
  • 150 g potato, peeled and cut into pieces
  • 600 g cauliflower florets
  • 1-2 tablespoons Vegetable Stock Paste (TMX)
  • 800 g water

Recipe's preparation

  1. Place parmesan into bowl and chop for 5 seconds/speed 6

    Set aside

    Without cleaning thermomix bowl, add onion, bacon and garlic.  Chop for 3 seconds/speed 6

    Scrape down sides of bowl.

    Add butter and saute 3 minutes/100 deg/speed 1

    Add potato, cauliflower, stock paste and water and cook for 20 min/100 deg/speed 1

    Add parmesan to soup and blend for 1 minute, gradually increasing speed up to 9.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     Loved this, got the tick of approval from the hungry mob! Will make it again.
    Didn't have onion, so left it out.
    Served it with home-made croutons & fried chopped bacon on top, yum!

    Love this one. Made it last night for the first time and it was super popular in a work meeting!!! I didn't add any potato and just used an entire head of cauliflower, and blitzed it a little bit to make it all fit before cooking.

    I felt the flavour was too onion/bacon heavy, and didn't showcase that yummy cauliflower well enough.  Also a bit gritty from the bacon no matter how long I blitzed it for.  tmrc_emoticons.(

    Just made this for dinner. Just delicious. Brought our Thermomix on a winter holiday and have made a different soup each day. This one is a winner, but they all have been!
