Ingredients

Chicken and Corn Soup

  • 3 spring onions, Roughly chopped
  • 2-3 Coins Fresh Ginger
  • 2-3 cloves garlic
  • 10 grams olive oil
  • 1 can 420 gram Creamed Corn, I use Edgell
  • 1 can 420 gram Corn Kernels (Drained), I use Edgell
  • 1 litre chicken stock, I use Campbells
  • 2 Cups Shredded Chicken, Supermarket Chook is fine, or chicken of choice
  • 2 teaspoons soy sauce, I use Salt Reduced
  • 1 tablespoon Sweet chilli sauce
  • 2-3 dashes sesame oil
  • 2 tablespoons cornflour, Mixed with a little water to make a paste
  • 2 eggs, Lightly Beaten

Recipe's preparation

  1. Place Spring Onions, Ginger and Garlic in Bowl.
  2. Chop Speed 5 for 5 seconds, MC on, scrape down sides of bowl and repeat.
  3. Add Oil and saute 100 degrees, MC off, speed soft Gentle stir setting"Gentle stir setting" for 3 minutes.
  4. Add the Creamed Corn, Corn Kernels (Drained), Chicken Stock and Shredded Chicken to bowl and cook for 15 minutes, MC off, 100 degrees, reverse speed 1 Counter-clockwise operation"Counter-clockwise operation" .
    During this step sit your basket on top of lid to eliminate splatters.
  5. While this is being done mix together your Soy Sauce, Chilli Sauce and sesame oil.
    Lightly beat your eggs.
    Make a paste with Cornflour and Water.
  6. Set time to 3 minutes, while mixing on speed 1, 100 degrees, slowly add the sauces, cornflour paste, and lightly beaten eggs.
  7. Serve as a starter to a meal, or on its own with fresh crusty bread, great on a cold winter day for lunch.

Tip

This recipe makes quite a large quantity, therefore would not be suitable for the TM31, or earlier model/s.

This recipe is suitable for freezing.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
