Ingredients

Soup

  • 1 leek, roughly chopped
  • 1 garlic clove
  • 3 centimetres fresh ginger
  • 30 g olive oil
  • 1 tbsp Vegetable stock paste
  • 1 litre water
  • 500 g chicken breast fillets, thinly sliced
  • 200 g mushrooms, thinly sliced
  • 400 g udon noodles
  • 4 spring onions, thinly sliced (for serving)
  • 1 red chilli, thinly sliced (for serving)

Recipe's preparation

    Method
  1. Place leek, garlic and ginger into bowl and chop 3 seconds, speed 7.

  2. Add olive oil, cook 3 min, 100 degrees, speed 1

  3. Place stock and water, cook 5 min, 100 degrees, speed Gentle stir setting"Gentle stir setting"

  4. Add chicken and mushrooms, cook 5 min, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" speed Gentle stir setting"Gentle stir setting"

  5. Use a metal spoon to remove and discard any scum from the surface of the broth.

  6. Add noodles, cook 5 min, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" speed Gentle stir setting"Gentle stir setting"

  7. Pour into Thermoserver or large bowl and top with spring onions and chilli to serve

Tip

You could cook the noodles separately as per packet instructions, add them to the Thermoserver first and then pour the soup broth over the top.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    Smile This recipe was quick, easy and delicious. I added half a roughly cut large zuchinni, after chopping the garlic etc, then chopped for 2 seconds speed 4. Used left over cooked chicken instead of fresh and only a small amount of thick rice noodles which was all I had. Thanks for posting.
