Ingredients

Loaf

  • 300 g pumpkin, cut into 1cm cubes
  • 150 g dates
  • 3 eggs
  • 30 g coconut oil
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 200 g almond meal
  • pumpkin seeds, To Garnish

Recipe's preparation

    METHOD
  1. Preheat your oven to 150 C fan forced or 170 C no fan.

    Line a loaf tin with baking paper

     

  2. Place Pumpkin into mixing bowl and chop 3 seconds, speed 7.

    Put aside in a separate bowl

     

  3. Without washing the bowl, add dates and chop 8 seconds, speed 7

    Scrape down side of mixing bowl with spatula

     

  4. Add reserved pumpkin, eggs,coconut oil, cinnamon and ginger to the dates. Mix 10 seconds, speed 4

     

  5. Add Almond meal and mix 10 seconds, speed 4

     

     

  6. Pour into loaf tin and sprinkle pumpkin seeds on top.

  7. Bake for 1 hour or until cooked through.

    Let it cool for 20 minutes before serving.

Tip

If you don't have Almond Meal pre-prepared, you can blitz your own almonds and even leave them chunky

    Very nice, I needed to cook mine for 1hr 20mins. I added shredded coconut, pepitas, goji berries and a sprinkle of coconut sugar on top before baking.
