Ingredients

Soup

  • 500 g fennel, washed, trimmed and cut into 1/4 or 1/8 depending on size
  • 2 small leeks, white part only, washed and cut into 3 cm slices
  • 4 French Shallots, peel and halved
  • 50 g unsalted butter
  • 2 tablespoon extra virgin olive oil
  • 1 litre Chicken stock or water
  • 125 g thin (pouring/whipping) cream
  • sea salt

Garnish

  • 2 rashers bacon, chopped
  • 8 sage leaves
  • 70 g unsalted butter

Recipe's preparation

    Soup
  1. Place fennel into mixing bowl and chop 4 secs / speed 5.  Remove from mixing bowl and set aside.

  2. Place leeks and shallots into mixing bowl and chop 5 secs / speed 7.

  3. Add butter, a little sea salt and olive oil and saute 4 mins / 120°C / speed 1.

  4. Add fennel and stock to mixing bowl, placing simmering basket instead of measuring cup onto mixing bowl lid and cook 20 mins / 100°C / Counter-clockwise operation"Counter-clockwise operation" / speed 1.

  5. Add cream to mixing bowl, insert measuring cup and blend 1 min / speed 4-8 increasing speed gradually

  6. Garnish
  7. Whilst soup is cooking, saute bacon in a frying pan over a medium heat until crispy.  Add the sage leaves and 70g unsalted butter, then cook the butter untill it is nut brown and the sage is crisp.

  8. To Serve
  9. Divide the soup among four bowls, top with the bacon and sage and add a good grind of white pepper.

Tip

Adding herbs is also a really nice thing to do to enhance the flavours of the soup.

A dash of Pernod would take this soup to another level.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
