Sautee

  • 80 grams onion
  • 1 clove garlic
  • 1 leek
  • 50 grams Butter

Soup

  • 400 grams jerusalem artichokes, peeled, roughly chopped
  • 400 grams potatoes, peeled, roughly chopped
  • 750 grams water
  • 2 1/2 tablespoons Vegetable Stock Paste (BCB)
  • 1/2 teaspoon dried marjoram or other spice
  • 1/2 teaspoon salt
  • pepper to taste
  • 175 grams cream

Recipe's preparation

  1. Add onion, garlic and leek to bowl. Chop 6 seconds, speed 7. Scrape down sides of bowl. Repeat if necessary.

  2. Add butter and sautee 4 minutes, varoma temp, speed 2

  3. Add all other ingredients except cream. Cook 25mins, 100oC, speed 2.

  4. Blend liquid for 1 minute, starting on speed 5 and gradually increasing to speed 9.

  5. Add cream and incorporate for 30 seconds, speed 4.

Tip

This is a delicious smooth, creamy soup perfect as a starter or main.

This recipe is NOT suitable for the TM31. Please reduce quantities to ensure you don't exceed the capacity of your machine.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
