Ingredients

Creamy Cauliflower soup

  • 70 g Cheese (I use tasty), Cubed
  • 1 onion, Peeled and quartered
  • 15 g olive oil
  • 250 g Potatoes (approx 4 baby), Unpeeled but cubed
  • 600 g cauliflower, (Approx 2/3 head) in florets
  • 750 g water
  • 2 tablespoons Vegetable stock paste
  • 2 cloves garlic, Peeled
  • 100 g Milk or cream

Recipe's preparation

  1. 1. Grate cheese 5 seconds speed 7 and set aside.
    2. Place onion in bowl and chop 5 seconds speed 5.
    3. Add olive oil and sauté 2 minutes 100 degrees speed 2 with measuring cup off.
    4. Add potatoes and cauliflower, water and stock paste. Cook for 25-30 minutes 100 degrees speed 3 or until vegetables are soft.
    5. Add garlic gloves and blend 1 minute speed 5, gradually increasing to speed 10.
    6. Add cheese and mix 1 minute speed 3.
    Serve warm topped with bacon bits or fried onion.

Tip

Please note not to overfill bowl as this will make blending difficult. I often remove half mixture and blend in 2 batches and the replace all before adding cheese.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
