Ingredients
Pumpkin Soup
- 1 butternut pumpkin cubed
- 1 onion, peeled cut in half
- 30 g Butter
- 1 clove garlic
- 1 cm ginger
- 1 tbsp korma curry paste, mild
- 1 tbsp vegetable stock, concentrate
- 500 g water
- 250 g coconut milk

Place onion, ginger, garlic in bowl blitz for 3 seconds on speed 7. Scrape down sides add in butter and curry paste.
Saute 3 minutes varoma speed 1 (mc removed).
Place unpeeled pumpkin, vegetable stock concentrate, water and coconut milk.
Cook for 20 minutes on 100 degrees speed 1.
Blend for 1 minute speed 9 gradually increasing speed from 1 to speed 9.

Tip
You can substitute the vegetable stock for chicken stock if preferred. Also you can choose a different curry paste such as a mild vindaloo paste.

Great soup. I made mine with left over vegetables 300g of water and a tin of Ayam coconut cream. Will do again.

Used jap pumpkin instead of butternut, coconut oil to do the onions in and red curry paste and it turned out really well. Very, very tasty.
My favourite soup! I used massaman curry paste as I didn't have korma.
Delish! I added two tblsp of vege stock and some curry powder as I didn't have the korma paste. Yummy!

A yummy curried soup!
we used 750grams of pumpkin and topped it up with sweet potato and used Keens curry powder Instead of the korma
it was one of the best pmpkin soups we have ever had
