Ingredients
Soup
- 1 brown onion
- 1 tablespoon Butter
- 1 clove garlic
- 2 carrots
- 800 gram pumpkin, Butternut is best but any will do
- 2 tablespoon curry powder
- 2 tablespoon Vegetable stock paste, Thermomix recipe
- 260 gram water
- 310 gram Tin of Creamed Corn

1. Peel the onion and garlic.
2. Put onion and garlic in the jug and chop. SP 4 / 5 seconds
3. Scrape down the sides and add the butter to the jug. Saute the onion and garlic for 3mins / SP 1/ 100deg
4. While the onion is cooking, dice the pumpkin and carrots into 2-3 cm portions (skin off the pumpkin).
5. Add the pumpkin, carrots, curry powder, vegetable stock paste and water into the jug. Cook on 100 deg/ SP1/ 26 mins
6. Add tin of creamed corn and puree the soup for 1min/ SP4/ 90deg or untill the soup is the consistency you like. This is quite a thick soup.
7. Serve with a dollop of sour cream and a sprinkle of you favourite fresh herb. I like to add coriander.
Method
Tip
This soup freezes extremely well (without the sour cream) and will last in the freezer for ages. This is my go to soup when everyone is feeling under the weather or on a cold day. It will be sure to warm you up.
If you dont have enough pumpkin, I have often substituted the pumkin for sweet potato or potatoes, which works just as well.

So yummy and filling. The flavours mixed well. I added fresh corn. My 1 year old loved it.
If you like a hit of curry.... This is the soup for you. I also like the corn as it is a little different to the usual pumpkin soup.
We added yoghurt to the soup to tone down the curry. We really liked it with the yoghurt.
I made this soup again and halved the amount of curry I still think it's too much. I wonder if it should say two teaspoons rather than tablespoons?
