Ingredients

Easy Chicken & Corn Soup

  • 1 clove garlic
  • 1 onion
  • 1-2 tablespoons olive oil
  • 1 fillet chicken breast
  • 400g can Creamed Corn
  • 400g can corn kernals
  • 400g water
  • 1-2 tablespoons vegie stock paste or chicken stock paste
  • 1-2 tablespoons soy sauce
  • salt and pepper to taste
  • shallots to garnish

Recipe's preparation

  1. Step 1)

    Peel garlic clove and add to bowl. Chop 2-3 seconds on speed 8.

     

  2. Step 2)

    Put onion in the bowl with garlic, chop 3-5 seconds speed 5. Scrape down sides with spatula.

     

  3. Step 3)

    Add olive oil, saute for 3 minutes 120* speed Gentle stir setting"Gentle stir setting"

     

  4. Step 4)

    Prepare chicken breast by cutting it into strips, and placing in the varoma.

     

  5. Step 5)

    When the onion and garlic are ready, add to bowl the cans of corn, stock paste, water. I fill up an empty can to measue my water.

    Place varoma on top and cook, 17minutes, Varomoa, Gentle stir setting"Gentle stir setting"

     

  6. Step 6)

    Check that chicken is cooked through and prolong cooking if its not cooked through. Add to bowl.

    Add soy sauce.

     

     

  7. Step 7)

    Shred the chicken to your desired texture, I just mix it on speed 8 for a few seconds until it's the texture I like.

    Serve. Add salt and pepper to taste. Garnish with shallots.

Tip

Tips:

Saute some bacon or ham with the onino and garlic.

Add some noodles after shredding the chicken.

You can use leftover roast chicken instead of steaming your own.

Add some barley or soup mix to thicken it up if you like.
