Ingredients
Ghoulishly Good Pumpkin Soup
- 500 g pumpkin, pealed, cut into pieces
- 25 g pumpkin seed, serve on top (optional)
- 0.5 tbsp coconut oil
- 0.5 piece red onion, cut in half
- 2 piece garlic
- 3 cm fresh ginger, pealed
- 1 tbsp curry powder
- 1 tbsp Vegetable stock paste, see tips
- 300 grams water
- 250 g coconut milk
- pinch to taste salt
- pinch to taste pepper, ground
- spoon to taste coconut yoghurt, servo on top (optional), see tips

- Place garlic, onion and ginger into mixing bowl and chop. 3sec/speed7. Scrape down sides of mixing bowl with spatula.
- Add Coconut oil and curry powder and cook. 3min/100degrees/speed1.
- Add pumpkin and chop. 10sec/speed7.
- Add water, vegetable stock paste and salt and pepper. Cook for 20minutes/100degrees/speed1
- Add coconut cream and blend. 1minute/speed5 (gradually increasing to speed 9 during the minute).
- Serve hot with a spoon full of coconut yoghurt and pumpkin seeds. Best accompanied by freshly baked bread.

You can replace coconut yoghurt with organic cream if you wish.
