Ingredients

  • 1 onion, peeled and cut in quarters
  • 3 cloves garlic
  • 3 cm ginger, peeled
  • 50 grams Butter
  • 700 grams butternut pumpkin, Peeled and chopped (3-4cm)
  • 2 tablespoon Vegetable TM Stock
  • 1 teaspoon sharwoods mild vindaloo, or alternate preferred paste
  • 1 can coconut milk
  • 400 grams water
  • Salt & pepper to taste
  • fresh coriander to garnish (optional)

Recipe's preparation

    Method
  1. 1. Place onion, garlic and ginger in bowl and blitz for 3 seconds on speed 7.

    2. Scrape down sides and add in butter. Saute 3 minutes, 100C speed 1 (mc removed).

    3. Add pumpkin, stock concentrate, water, coconut milk and curry paste. Salt and pepper to taste. 

    4. Cook for 22-30 minutes on 100 degrees speed 1. Check pumpkin is cooked and add more time if not.

    5. Blend for 1 minute speed 9 gradually increasing speed from 1 to speed 9. Check consistency - repeat if still lumpy.

     

    6. Serve garnished with fresh coriander if desired.

Tip

If you like more of a runny soup add an extra 100 grams water.

Also nice with a dollop of SL cream on top

    My whole family love this soup, just enough spice to make it a little different to normal pumpkin soup- I have even converted non pumpkin eaters with this soup!
