Ingredients
- 2 tablespoonsof margarine
- 1 large onion
- 2 cloves garlic
- 1/2 teaspoon tumeric (ground)
- small knob of ground ginger, more if you like it to taste more of ginger (peel off)
- 375 grde lentils
- 1 large chilli
- 1 bay leaf, (dry if you haven't got fresh)
- 3 stalks celery (optional)
- 2 tablespoonsof TM vegetable stock
- 1000 g water
- 1/400 gcan chopped tomatoes
- 2 tablespoonsof tomato paste
- 1 tablespoon chopped coriander
- freshly ground black pepper

I'm cooking this todayRecipe's preparation
put onion, garlic, ginger and chilli in Thermomix. Chop for 10 seconds on speed 8
Add tumeric and margarine and saute for 2 minutes on 100 degrees on speed 1.
add lentils, bay leaf, celery stock and water. Cook in Thermomix on 100 dgerees for 20 minutes, on reverse, speed 2.
Remove bay leaf
Add tinned tomatoes, tomato paste and coriander and cook for another 5 minutes on 100 degrees on reverse speed 2.
Add freshly grund pepper and fresh coriander and serve with crusty bread.
Tip
If you don't like celery, don't add. If you like the soup to be thicker, add more lentils.

Loved this soup. Used a small birdseye chilli. Didn't have any celery or coriander, so left these out. Used olive oil instead of margarine. Really nice soup - perfect easy dinner with crusty bread. thanks
My partner loved it, but it was a bit too spicy for me, I was a bit heavy handed with the turmeric and ginger, making it again tonight and have been a bit more conservative with the spices.

This is a really nice soup, perfect to use ingredients on hand.
Sorry, I should have specified that it was dried lentils.. Also, I have modified the soup to contain less water as the batch I made tonight was too runny.
Red lentils are dried lentils, usually found in the soup aisle of the supermarket. They dissolve rather than remain whole. Consequently, red lentlis are also used to thicken the soup.
Your soup recipe sounds delicious - can I just clarify 'red lentils and are they 'dry' not tinned' Can't wait to make it. Thanks
