  • handful Italian parsley, leaves only
  • 250 g bacon rashers, diced
  • 3 medium brown onions, peeled & halved
  • 30 g plain flour
  • 800 g water
  • 2 tbsp stock paste, chicken or vegetable
  • 500 g potatoes, 2 cm cubes
  • 2 egg yolks
  • 300 g sour cream

Recipe's preparation

    Method
  1. Place parsley in TM bowl and chop 3 sec/sp 6. Set aside.

  2. Place bacon in TM bowl and saute for 8 mins/120˚C/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" with MC off. Set aside.

     

  3. Place onions in TM bowl and chop 4 sec/sp 6. Scrape down bowl. Saute 6 min/120˚C/sp 1.

     

  4. Place flour, water, stock paste and potatoes in to TM bowl and cook 15-20 mins/100˚C/sp 2. Check the potatoes are tender, cook for a little longer if not.

     

  5. In a bowl, combine egg yolks with sour cream, add to TM bowl and blend for 20 sec/sp4 increasing to sp 9.

  6. Add reserved bacon and stir through for 10 sec/Counter-clockwise operation"Counter-clockwise operation" /sp 3.

  7. Serve and garnish with reserved chopped parsley. Serve with fresh focaccia wedges.

Tip

1.Substitute potatoes with sweet potato or half and half.

2. To make gluten free; use rice flour or gluten free cornflour

    I absolutely loved this soup!
    I added less water to make it extra thick and it ate like a meal.
    We got so many serves of it and my 15 month old son also loved it.
