Ingredients
Minestrone soup
- 1/4 bunch parsley leaves (fresh no stalks)
- 1/4 bunch Basil Leaves (Fresh)
- 100 g Brown onion peeled
- 2 cloves fresh garlic peeled
- 30 g olive oil
- 120 g Bacon or Pancetta cut into small strips
- 450 g Vegetables already diced (ie celery, leek, carrot, potato, green beans, zucchini or frozen peas)
- 40 g tomato paste
- 2 tbsp Vegetable stock paste
- 700 g water
- 80 g Small pasta of choice
- 400 g Tin borlotti beans rinsed
- pepper to taste
- grated parmesan to serve

- Just a quick tip before you start. If you half bacon still quite tasty but if you use full amount be careful with stock paste as it can end up on salty side. You won't need extra salt seasoning at the end and be careful with how much Parmesan you use. You can over salt this soup. Enjoy
Place parsley and basil into TM bowl and chop for 3sec/speed 7. Set aside in seperate bowl
Halve onion and place that and garlic into TM bowl and chop for 3sec/speed 6. Add oil and sauté for 3min/100°C/speed 1 (MC off)
Add bacon or pancetta and cook for 5min/Varoma temperature on "Counter-clockwise operation" + speed 1 and simmering basket on top to prevent splatter
Add vegetables (not zucchini or peas if using), add tomato paste, veggie stock paste and water and cook for 15min/100°C on "Counter-clockwise operation" + speed 1.5 and MC on
Add pasta (optional), zucchini & peas and cook for a further 15min/100°C on "Counter-clockwise operation" speed 1.5 with simmering basket on top to prevent splatter.
Add rinsed beans, herbs and heat through "Counter-clockwise operation" sp 1.5 for 1 min. Season if needed and serve sprinkled with Parmesan.

Tip
If you don't mind the rustic look or want to purée your soup, you could chop your vegetables beforehand in Thermomix to desired size. Chop zucchini seperately and place aside with frozen peas until required. Enjoy this soup with crusty bread. I prefer to hand dice my vegetables so have not puréed this soup.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Just expressing my appreciation for this recipe. I have used it countless times over the last ~10 years. Simply put, it is one of the best meals on this site, and one of the very few that my painfully picky kids will actually eat. It is packed with vegetables and nutrients whilst also being incredibly yummy. Its one of those true Thermie recipies that makes having a TM such a joy.

Just read your comment. No it was adding the pasta to the bowl if you don't want the soup gluten free. It's on reverse so will be fine.

s.jane88:i would suggest this means putting the dry pasta in the simmering basket to cook while you're cooking the soup in the main bowl.hope that helps! welcome to the world of thermomix
