Ingredients
Variation Lower Carb Carola's Pumpkin Soup
- 1 small onion, peeled and quartered
- 2 cloves garlic, peeled
- 3 slices bacon, torn to 5cm lengths
- 2 heaped teaspoon olive oil
- 1 teaspoon curry powder, (Babas curry powder)
- 1000 grams pumpkin, chopped to 3x3cm cubes (including skin and seeds if you like!)
- 200 grams water, may need more to thin out after its cooked
- 2 tablespoons vegetable stock concentrate, (or chicken stock paste)
- 100 g evaporated milk, (or cream), optional

- Add onion, garlic and bacon to Thermomix bowl. Chop 4 secs / sp 5. Scrape down edges and add olive oil and curry powder (you could use more if you like). Saute 3 mins / Varoma temp / Sp 1.
- Add pumpkinand up to 200g of water (don't go over the maximum level on the jug!). Don't worry if it looks like there isn't enough liquid added as a lot of liquid will come out of the pumpkin while cooking. At thi stage its better to add less water than you think as pumpkins can vary in their water content. Add stock concentrate and cook 25-30 mins / 100° / Sp 1.
- SLOWLY turn the speed dial up to Sp 4 until balanced and no longer vibrating. Once settled, slowly turn speed dial up to Sp 9 / 1 min. Add cream and combine 5 secs / sp 4.
If you like serve dolloped with some sour cream and sprinkled with chives or a little nutmeg.
Tip
I have been making Carolas orginal pumpkin soup for years and we all love it however over time it has been adapted to cater for a lower carb diet and we have been making it this way ever since. Onion is relatively high in carbs so if you are following a low carb/keto diet go small or omit entirely. you can also adjust macros by increasing bacon and cream content if needed

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
