Ingredients

  • 1 brown onion, Halved
  • 1 garlic clove
  • 180 g leek, rough chopped, White parts only
  • 40 g olive oil
  • 100 g sweet potato cubed, 2cm approx
  • 300 g Washed potatoes, cubed, Skin on 2cm approx
  • 600 g water
  • 1-2 tbsp TM vegetable stock
  • 120 g Full Fat pouring Cream
  • salt and peper to taste
  • Garnish with parsley or chives

Recipe's preparation

    METHOD
  1. Place onion, garlic and leek into mixing bowl and chop 3 sec/speed 7.


    scrape down sides of bowl.


     


    Add oil and sauté 3 min/Varoma/speed 1.


    Add potatoes, water and stock and cook 18 mins/100 oC/speed 1.


    blend 30 sec/speed 8, gradually increasing speed from 1-8 until desired consistency


     


    Add cream, season to taste and blend 30 sec/speed 4

    Yep, using coconut cream is a great option for lactose intolerant folks.  I used 180 g and it was great.  tmrc_emoticons.-)

    Beautiful with Dutch Cream potatoes.  Used carrots instead of sweet potato and some left over coconut cream instead of dairy cream.  Very nutty flavour.
