Ingredients

Potato and Leek Soup Mix

  • 1 whole leek, Sliced and dehydrated
  • 250 g arborio rice, Or white rice
  • 30 g crispy fried onion
  • 10 g salt
  • 20 g vegetable stock powder, (Dehydrated vegetable stock paste)
  • 100 g potato starch
  • 1/2 tsp ground pepper
  • 1/2 tsp Garlic powder
  • 50 g powdered milk
  • 60 g cornflour
  • 1 tsp Dried parsley

Recipe's preparation

  1. Place the dehydrated leek (approx 25g) into the mixing bowl and mill for 30 Sec, sp10. Transfer into a bowl and set aside.
  2. Add rice, fried onion, and salt into the mixing bowl and mill for 1 min, sp10.
  3. Add the rest of the ingredients including the reserved leek powder and mix 20 sec, sp5. Transfer soup powder to an airtight container and store in a cool dry place and use as required.

Tip

Directions for making up a serving of soup:
-In a Thermomix
add approx 5 Tbsp of soup mix to 350g of water and
set 8 min, 80deg, sp 4 or use Thicken mode on a TM6.

-To make a mug of soup:
add 4 Tbsp of soup mix into the mug and add a few Tbsp of cold water to make a thin paste before adding boiling water and stirring untill smooth. Let it sit covered, for a few mins before stirring and enjoying.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
