  • 1 shallot, (or small brown onion) peeled and halved
  • 2 cloves garlic, (3 if small)
  • 1 tablespoon olive oil
  • 20 grams Butter
  • 2 leeks, (pale section only) washed, dried, thinly sliced
  • 5 potatoes, (medium sized, approx. 800g)
  • 1 litre chicken stock
  • 250 grams water
  • 3 sprigs fresh thyme
  • 200 grams thickened cream

Recipe's preparation

    Steps
  1. 1. Place shallot and garlic into mixing bowl and chop 3 sec/speed 5 with lid and MC. Scrape down sides of mixing bowl with spatula.

    2. Add olive oil, butter and leeks (reserve some for garnish, if desired) and saute 6 min/120°C/speed 1 with lid and MC.

    3. Add potato and cook for 5 min/120°C/speed 1 with lid and MC.

    4. Add stock, water and thyme and cook 25 min/Varoma/Speed 1 with lid and MC, or until potatoes are very tender. Remove and discard thyme stalks.

    5. Add 125g cream and blend 1 min/speed 5-8 with lid and MC until mixture is smooth.

    6. Season to taste with salt and pepper.

    7. Serve soup hot, swirled with remaining cream (garnished with extra leek, if desired) with toasted sourdough. Enjoy!
