- 600 grams butternut pumpkin, Washed & seeded, not peeled. Cut into 5cm pieces
- 1 clove garlic
- 1 brown onion, Cut into halves
- 30 grams olive oil
- 200 grams red lentils, dried
- 1 level tablespoon mild curry powder
- 1 heaped teaspoon Turmeric, ground
- 1 teaspoon cumin, ground
- 1 teaspoon coriander, ground
- 1/2 teaspoon chilli pwd, add more if you like it spicy
- 1 level teaspoon paprika ground
- 1 heaped tablespoon Vegetable Stock Paste (BCB)
- 700 grams water
- Salt & Pepper, to taste
Bacon Dust
- 250 grams shortcut bacon

Weigh pumpkin pieces into TM bowl and chop roughly, sp 4, 20 secs. Transfer to a bowl. Rinse TM bowl.
Add onion and garlic to TM bowl, sp 5, 5 secs. Scrape down sides of bowl.
To bowl add red lentils, curry powder, spices and olive oil. Cook for 4 mins, 100 degrees, speed 3.
Return chopped pumpkin to TM bowl. Add stock paste and water along with salt and pepper. 25 mins, sp 3, 100 degrees, MC on.
If TM bowl is close to max fill line, half mixture in TM bowl, by pouring some into a separate bowl before blending soup in 2 batches. 40 secs, gradually increase to sp 8.
Season to taste and serve with a dollop of sour cream and bacon dust and fresh herbs.
Place bacon on a wire rack on top of an oven tray and bake in a hot oven (200 C) for 10mins or until med-well done. Drain on paper towel.
Add cooked bacon to TM bowl and chop on sp 7 (fine dust) or sp 4 (bacon chips), 40 secs or until desired consistency has been reached.
Serve bacon dust with sour cream and herbs on soup.

Absolutely beautiful!!! Subbed 270mls of the water with a can of coconut cream and added ginger in with the onion and garlic. Thick, creamy, little kick of spice, AMAZING!! Thank you!

yum!! didnt bother with the bacon dust, and it was superb with a spoonful of sour cream.
Made this tonight after trying a similar soup on the weekend.
I added some sliced Ginger with the garlic & onion & 2 cans of coconut cream then made up the rest of the liquid with water. Next time I’ll probably try one can instead of the 2, it was slightly thicker than I wanted.
The flavour was fab!

Tasty but a bit spicy for me.
I added one teaspoon of curry powder and that had enough "kick" for me.
I also added chopped bacon during the cooking stage.
Will be making this again.
