  • 800 grams pumpkin, chunks to fit through lid
  • 50 grams raw cashews
  • 2 cloves garlic
  • 1 tablespoon thermomix vegetable stock
  • 1 small piece ginger
  • 750 grams water

Recipe's preparation

    Soup
  1. Add cashews and mince 10 secs sp 8, scrape down sides of bowl.
    Add pumpkin, garlic and ginger and chop 10 secs sp 7, scrape down bowl.
    Add water and stock.
    Cook, time 20 mins, temp 100, sp 2-3.
    Puree 1 min sp 8.

Tip

Add more ginger if preferred.

Vary the water according to personal preference.

Also nice with sweet potato, or a mix of pumpkin and sweet potato.

    Delicious and so easy. Thank you. This has to be one of the easiest soups to make and tastes yummy. I think you could probably do step 1 and step 2 together saving even more time. I did increase the ginger by half - I like ginger.

    This got the second bowl treatment by my fussy with pumpkin soup 4.5 year old so a definite winner here. Love how creamy the cashews make it without being dairy filled- as I can't have dairy. Will be using this recipe again and again with our homegrown pumpkins.

    Simple & Delicious.  Really love this soup as the flavours are so simple but just right and it is so silky on the palate.  Also added a little fresh tumeric and had no TM stock so used an organic broth. Is definitely going into my favourites folder. Thank You tmrc_emoticons.)
