Ingredients

  • 2 red capsicum, Roughly chopped
  • 500 grams fresh tomatoes, Quartered
  • 1 red onion, Pealed and roughly chopped
  • 3 cloves garlic, Pealed
  • 4 sprigs parsley, Leaves only
  • 50 grams tomato paste
  • 1 tablespoon Vegetable stock paste, From EDC
  • 60 grams water
  • 20 grams olive oil
  • 100 grams natural yoghurt, To serve
  • 50 grams Parmesan cheese, To serve

Recipe's preparation

    Roasted capsicum and tomato soup
  1. Preheat oven to 200 degrees. place capsicum and red onion on baking tray , spray with a little olive oil and roast for 10-15 minutes or until starting to roast.


    Meanwhile,  Put Parmesan into Thermomix bowl with measuring cup on lid. Grate for 10 seconds speed  8. Set aside.


    Put garlic cloves into Thermomix bowl with MC on lid. Mince for 3 seconds speed 7. Scape down sides.


    Add olive oil and tomatoes and cook 100 degrees, speed 1 for 8 minutes. 


    Add stock paste, tomato paste, water , parsley, roasted capsicum and onion and cook for  10 minutes speed 1, 100 degrees.


    Purée for 1 minute  speed 7. 


    Serve with Parmesan, cracked pepper and a dollop of natural yoghurt

    Really delicious soup. We made with some red capsicums that needed to be used. Probably did twice or three times amount of capsicum and only a couple of tomatoes. Just roasted onion, capsicums and tomatoes and blitzed them all together. Really nice with a dollop of yoghurt and some grated cheese. Added quite a bit more liquid too as it was quite thick.

    Capsicums, tomatoes, red onion, garlic all went into the oven for 20 odd minutes. Used sour cream instead of yoghurt. Only enough for a main meal with sour dough for two hungry men. Used vegeta so needed more than a tablespoon of stock. Added Salt & Pepper. Amazing, thank you!

    I made this yesterday when I came home from work. I had two very tired looking Red Peppers in the fridge and they were transformed into a nice hearty soup. I have leftovers for lunch tomorrow tmrc_emoticons.) Thank you.

    One of my favourite soup recipes. I roast the tomato as well and sometimes add small meatballs to beef it up a bit for my hungry teenage boys and serve it with sourdough. Yum!

    Yum, amazing !
    I used the amout of fresh tomatoes but also added 1 can of whole tomatoes.
    Also didn't use youghut (as I didn't have any at the time) so substituted with sour cream.

    Delicious! I added a red chilli as I had one here that needed to be used up. Served with Thermie Cashew Sour Cream and some vegan cashew parmesan as we are dairy free.

    Wonderful soup recipe. Easy to make, tasty and my husband loves it. It’s thick which is how we like soup, however if you like a thinner soup just a very small amount of extra water.
