Recipe's preparation

    Roasted Tomato
  1.  

    1. Preheat oven to 220C/200C fan-forced. Place tomato on a baking tray. Drizzle tomato with half the oil. Season with salt and pepper. Roast for 15 to 20 minutes or until tender.

    2. Place garlic clove and onion into mixing bowl and chop (3sec/speed 5). Scrape down sides of mixing bowl with spatula.

    3. Add oil and saute (3min/120 degree/speed 1)

    4. Add potato, tomato paste, brown sugar, 500ml of stock and cook (20min/100degree/speed 2)

    5. Add roasted tomatos to mixure and blend (1min/speed 4-8 increasing speed gradually

    Great base to start with. I replaced the potato for carrot and roasted with tomatoes and garlic
    I also added

    1/2 C Sundried tomatoes
    Cup basil leaves
    1 tsp crushed chilli
    Can chickpeas

    Good starting point. For more robust flavour (preferred by my boys) I put the following items in the TM on 4 sec / sp 5 then added the CJFace's tomato soup
    - half a cup of semi sundried tomatoes
    - 3 stalks basil (leaves only)
    - 1 tspn Masterfoods fresh chopped chilli
    - 2 rashers panfried prosciutto (left over from breakfast)

    Not a tomato soup fan, but hey this is sooooo good I now use it as one of my go-to recipes. Yummm....

    This is one of my go to recipes when tomatoes are in abundance and insanely cheap.

    I then roast up 2kgs of tomatoes, make two batches then freeze them in old take away containers. When the weather cools back down hubby loves taking these to work with a bread roll for an easy, healthy & tasty lunch.
