Ingredients

  • 150g brown onion, cut in half
  • 900g water
  • 3 tblsp Vegetable stock paste
  • 225g leeks, cut into 2cm pieces
  • 225g new potatoes, skin on, washed and cut in quarters
  • 225g broccoli, cut into florets
  • 175g frozen peas
  • 1 handful fresh parsley

Recipe's preparation

  1.  

    Place 150g brown onion into mixing bowl and chop 3 secs Speed 5.  

    Scrape sides of bowl with spatula

     

    Add 900g of water and 3 tblsp of vegetable stock paste to the bowl.

     

    Place simmer basket into mixing bowl and inside place 225g of leeks and 225g potatoes.  

     

    Place lid on and Varoma into position.  

     

    To the base of the Varoma add 225g of broccoli (making sure there is enough space for steam to come through).

     

    On the tray of the Varoma place 175g of peas

     

    Cook 25 mins Varoma Speed 2

     

    Place contents of Varoma and the simmer basket into the mixing bowl, also adding a handful of parsley.  

     

    Puree for 10-15 secs Speed 5

     

    Serve garnished with parsley and/or sour cream.  Season to taste with salt and pepper

Tip

 

This is a super easy recipe as everything goes in at the beginning and you can come back in 25mins to a meal ready to go.

Blending for 10 - 15 seconds will give you a chunkier style soup.  For a smoother texture blend longer and increase speed.

Steam pieces of chicken in the varoma with the veggies and add to the soup at the end for a hearty meal for the meat eaters in the house.

 

Can also be made in the TM31 using these quantities

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
