Ingredients

Spicy cauliflower soup

  • 160 g cauliflower, cut into small florets
  • 1-2 tsp Madras curry powder, plus extra for garnishing
  • 40 g Raw Cashew Nuts
  • 2 tsp Vegetable stock paste (see Tips)
  • 400 g water
  • fresh coriander, leaves only, for garnishing (optional)

Recipe's preparation

  1. Place all ingredients, except coriander leaves, into mixing bowl and cook 15 min/100°C/speed 1, then blend 1 min/speed 4-9, increasing speed gradually from speed 4 to speed 9.
  2. Serve soup hot, garnished with fresh coriander leaves (optional) and extra curry powder to taste.

To make your own Vegetable stock paste, please refer to The Basic Cookbook or Everyday Cookbook.

You can replace Madras curry powder with any curry powder in this recipe.

Crush some Curried almonds into your Thermomix to garnish your soup for added texture and spice.

The cashew nuts in this recipe add creaminess to the soup without the need for dairy.

Refrigerate or freeze any leftovers to enjoy later.

    Enjoyed this. Will decrease the curry powder that I had next time and used chicken stock that I had instead of the water only. I will increase the amount next time.

    Awesome. Used some of my home made curry powder. So quick, easy and healthy. Travelling in a caravan atm, so made a second batch to freeze and enjoy later 😋

    Made this today. Very quick and easy. I doubled the recipe, although I only added 3tsp curry (I only had Keens). I found it a little too spicy so I’d suggest 2tsp next time. I also found 4tbsp vegetable stock way too salty (I didn’t read the recipe correctly!)
    Would definitely make again with the above adjustments as it was still yummy.

    Delicious! I doubled the recipe and used 2 teaspoon of regular curry powder and 1 teaspoon of hot paprika. This made for a lovely spicy soup. Might be too hot for kids if they are not used to spice. My fussy husband loved it too. And took 5 mins to make and 15 to cook.tmrc_emoticons.)

    This is a delicious, quick and easy soup that can be on the table in 20 mins! I make at least double, as the kids love it and will eat it as an after school snack on winter days. Its a winner in our house, and make it nearly every week!

    I always double or triple this recipie as it’s a winner in our house. It is absolutely delicious and so simple.
