Ingredients

  • 1 large onion quartered
  • 2 garlic clove
  • 15 grams piece fresh ginger, peeled
  • 1 chilli, optional
  • 1.5 tsp Ground Coriander
  • 1.5 tsp ground cumin
  • 1 tsp ground turmeric
  • 30 grams olive oil
  • 750 grams sweet potato, peeled & chopped
  • 4 Kaffir lime leaves
  • 400 grams coconut milk
  • 300 grams water
  • 1 tbsp veggie stock concentrate
  • fresh coriander leaves, for garnish, if desired

Recipe's preparation

  1. Place onion, garlic, ginger & chilli (optional) into TM bowl and chop for 3 seconds on speed 7.

     

    Add coriander, cumin, turmeric and oil and sauté for 3 minutes at 100 degrees on speed 1 with the MC off.

     

    Add sweet potato and chop for 10 seconds on speed 6.

     

    Add kaffir lime leaves, coconut milk, water & stock and cook for 20 minutes at 100 degrees on speed 1.

     

    Remove kaffir lime leaves.

     

    Blend for 30 seconds by slowly going from speed 1 to speed 9.

     

    Garnish with fresh coriander & a dollop of capsicum jam if desired.

     

Tip

I found this recipe on the packet of Kaffir Lime Leaves that I bought at Woolworths. A great way to use the leaves up. I have found that you can store any left over leaves in a snap lock bag in the freezer.

    Gotta be honest, the sound of this soup didn't really thrill me and I made it just to get rid of some Kaffir lime leaves...turns out it is so tasty!!! Straight to the saved list! Thanks for sharing Smile

    Not something that I would read and think to make, but man its delish and I am glad that a friend convinced me to make it. Will become a regular in this house and so much nicer than boring pumpkin soup

    What a great tasting soup, I added a couple of chillies for extra heat, but loved the lime flavour tmrc_emoticons.-)
