Ingredients

Spice Paste

  • 2-3 stalks lemongrass, stalks, young cut into 3-4 pieces
  • 1 Red Shallot, halved
  • 4 fresh coriander roots & stems, reserve leaves for garnish
  • 5 Kaffir lime leaf
  • 10 centimetres galangal root, scrubbed
  • 10-12 Birdseye chili

Stock

  • 1 can coconut milk
  • 600 grams water
  • 1 tablespoon TM Vegetable Paste

Soup

  • 2 Limes Jucied
  • 5 grams fish sauce
  • 5 Kaffir lime leaves, torn
  • 10 grams Coconut sugar
  • 15 grams galangal, thinly sliced
  • 200 grams enoki mushrooms
  • 200 grams Oyster Mushroom, torn
  • 350 grams Chicken Thigh Diced, 1cm
  • 4-5 Chillies, sliced on sharp angle
  • 1 stalk lemongrass, thinly sliced

Recipe's preparation

  1. Add all spice paste ingredients & blend 3 seconds, speed 7.

    Scrape down sides of bowl & add stock ingredients.

    Cook 7 mins, Varoma, speed 1.

    Strain thru simmering basket into thermoserver or similar & rince Closed lid"Closed lid" .

  2. Return stock toClosed lid"Closed lid" and add all soup ingredients.

    Cook 12-15 min, 100C, Counter-clockwise operation"Counter-clockwise operation" speed 2.

     

  3. Divide into serving bowls as part of a Thai meal or enjoy with steamed jasmine rice or noodles for a light meal.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
