Ingredients
Watercress soup
- 150 grams watercress leaves, removed from stem
- 2 onions, medium sized
- 1 stalk Celery
- 1 tablespoon oil
- 200 grams Potato, diced
- 1 tablespoon Vegetable stock paste
- 500 grams water
- 3 tablespoons cream

I'm cooking this todayRecipe's preparation
1. Chop onions and celery speed 5, 4 seconds.
2. Saute in oil for 3 mins, 100C, speed 1.
3. Add water, vegetable stock paste and potatoes. Cook for 15 mins, 100C,
speed 1.
4. Add watercress. Cook for 3 mins, 100C speed 1.
5. Add cream and pepper. Puree for 30 secs, speed 10.
6. Serve in bowls. Add a dollop of cream and leaves for garnish.

Tip
Watercress can be substitued for other leafy greens. (Silver beet, spinach, etc.)
This soup has a delicious, "green" taste. A family favourite!

Quick, tasty and few ingredients. I love this soup - i hadn't made it for a few years actually until I accidentally came across it this morning! I keep the skins on my potatoes - extra fibre and minerals too, watercress is so beautiful at the moment!!! Thanks
Excellent soup. I also left out the cream and it was perfect!
i started to mix at speed 5/6 as I was worried about using speed 10 with so much liquid, so started slower and ended up at 10 for a few seconds.
Delicious soup
Delicious, simple and very quick to make. I left out the cream as I found there was enough creaminess from the potatoes. Yummy and healthy!
ive just boiught a huge bunch of watercress from our local market guy. im going to give this a go. apparently watercress is very good for "everything" cant wait to try
