Ingredients
Zucchini & parmesan soup
- 1 small onion
- 1 clove garlic
- 1/2 tablespoon fresh thyme
- 20-30 grams extra virgin olive oil
- 300-350 grams potatoes, peeled, chopped into 1-2cm cubes
- 1-2 tablespoon chicken stock paste, (can use veggie)
- 750 grams water
- 450 grams zucchini, slices/cubes
- handful fresh parsley, leaves only (optional)
- 25 grams Parmesan cheese, shredded/greated
- 40 grams sour cream

- Place onion, garlic and fresh thyme into TM bowl. Chop 2 sec, speed 9, MC on
- scrape down bowl & add in oil. Saute 3mins, 100 degrees, speed 2, MC on
- add Potatoes, stock paste, and water and cook 18mins "Counter-clockwise operation" , speed 2, 100 degrees, MC off (simmering basket in its place)
TIP - you can slice and weigh Zucchini's into simmering basket while this step is cooking and put aside once you have the correct weight - add in Zuchinni and cook for a further 4mins "Counter-clockwise operation" , 100 degrees, speed 2, MC off
- add in Parmesan Cheese, Sour Cream & fresh parsley (if using). Blend for 1 min speed 5 gradually increasing the speed to 9 (MC ON!)
Tip
Serve with extra parmesan, black pepper and a crusty loaf of bread.

I have just made this with dried Thyme (3 teaspoons) and didn't peel the potatoes (used washed potatoes). Still really nice!!
