Ingredients

brown onion (peeled and halved)

  • 1 brown onion, peeled and halved
  • 1 cube ginger, about an inch
  • 1/2 stalk lemongrass, or 1tbsp of the tube stuff
  • 2 tablespoon fish sauce
  • 1 teaspoon ground tumeric powder
  • 2 medium carrots, cut into thirds
  • 1 can Ayam coconut cream
  • 1 tablespoon coconut oil
  • 1 fresh red chilli, ends cut off and cut in half lengthways

Recipe's preparation

    method
  1. 1. Place onion, ginger & chilli (lemongrass also if using fresh) in thermomix bowl chop 3 sec, speed 7

     

    2. Scrape down sides of bowl, add coconut oil (and lemongrass if using paste). Sauté 3 minutes Varoma speed 1.

     

    3. Add carrot chop 3 sec, speed 7

     

    4. Scrape down bowl and add remaining ingredients (tumeric, fish sauce & coconut cream) cook 12 minutes 100° speed 1

     

    5. To puree 1minute speed 9 (increasing speed slowly and bejng cautious of hot ingredients)

Tip

You can also use 1/2 a green chilli instead of the red and fresh tumeric if you can source it.

I spray my mc and lid with cooking spray to stop the tumeric staining the plastic.
