  • 3 Gluten Free Weet-Bix
  • 150 g plain flour
  • 50 g raw sugar, Optional
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 20 g wheat germ
  • 20 g Shredded Organic Coconut
  • 1 free range egg
  • 185 g full cream milk
  • 190 g fresh or frozen raspberries

Recipe's preparation

  1. 1, Preheat oven to 180 (fan forced 160) and line a 12 hole cupcake/muffin tin with baking cups

     

    2, Place weet-bix, flour, raw sugar, baking powder, baking soda, wheat germ and coconut into the bowl. Making sure the MC is on 10sec/Speed7 

     

    3, Add eggs and mik. With MC on 1min/speed2, remove MC at 30sec remaining and add 70g raspberries while blades are still on

     

    4, Add remaining Raspberries 10sec/Speed 1 Counter-clockwise operation"Counter-clockwise operation"

     

    5, Spoon mixture into prepeared muffin tin and bake for 20-25 minutes. 

     

    6, Let cool before serving

     

    **Note - Normal Weet-Bix can be used, however I found that the GF is the additive free option

     

    Varition - Apple and Cinnamon. Leave out the raspberries and add diced Apples and Cinnamon. Prior to step 1, grate 2 apples then transfer/set aside in another bowl. Rinse and dry bowl and proceed to step 1 as above also including 1 Tsp Cinnamon

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    i used the apple and cinnamon version which worked really well as well. I could t believe how quickly the kids ate them, even my husband said they were nice.

    Nice healthy recipe and good flavour but I'd suggest sticking strictly to the specified mixing times. I added sugar and mixed again at the end, and the cooked texture was quite strange. I felt that they needed the sugar (I used frozen mixed berries). I'm sure they are 5 star if made properly but mine were disappointing so I can't rate them as highly as they probably deserve.

    I LOVE these! I made them after seeing them on the facebook group the other night. I needed a healthy snack to send in my girls daycare lunchboxes and I'm so glad I chose these. I added the sugar but they probably didn't really need it as they were lovely and sweet. I didn't add wheatgerm as I didn't have it, but will get some for next time for some hidden goodness. My girls loved the colour of them "Pink muffins!. My mix made 6 large sized muffins made in a oversized silicone muffin tray and 6 mini ones. Will definitely try the apple suggestion - I think this is a great recipe to add any ingredient to. Thanks for a lovely recipe!
