Cate's Quiche Cups
- 5 eggs
- 300 grams thickened cream, (Full cream)
- 6 sprigs fresh parsley, (Leaves only)
- cracked pepper, (To taste)
- 110 grams Tasty cheese, (Grated)
- 6 slices shortcut bacon, (Diced)
- 3 sheets Puff pastry, (Defrosted & sliced into 4 squares)

- Preheat oven to 200 degrees & grease a 12 cup cupcake tray.
Remove puff pastry from freezer to thaw while preparing the mixture.
If cheese is not grated, do this now - Cube block cheese into 3cm pieces & turbo for approx 8sec until crumbled. Set aside. No need to rinse bowl.
Add eggs, thickened cream, 4 sprigs parsley (remaining is to garnish) & cracked pepper to taste. Mix 8 sec, speed 6, MC on.
Add cheese & bacon pieces. Combine 8 sec, reverse, speed 2, MC on.
Cut each sheet of pastry into 4 squares once thawed & insert one square into each cup of the cupcake tray, folding the sides of the pastry down slightly.
Scoop equal amounts of quiche mixture into each one & garnish with remaining parsley.
Put into oven for approx 25min or until golden brown. Quiche may appear 'puffed' while cooking - they deflate once out of the oven.

Simple and delicious! I used fresh basil instead of parsley and added cherry tomatoes. They were a big hit with the family and will become a regular in this house! I think they tasted even better cold the next day. Going to make a batch for the freezer for quick fix snacks!

I added half an onion & garlic clove and sauteed these with the parsley for a few minutes before adding the egg mix. I cooked as one large quiche and the whole family enjoyed it.

Wow so simple quick and tasty.
I added:
1x small can of asparagus
Hand full of corn
Small tin of chopped mushrooms.
Just was a great hit.
I used puffed pastry and I put 2x large table spoons in 24 cup cake size tin.
Cooked perfectly as mentioned in the recipe.

These were seriously delicious!! I added onion, tomato, corn and a few extra eggs just to ensure enough egg covered and they still ended up perfect and tasted amazing!! I took 23 of them to a morning tea at work this morning and there were only 2 left by the end of the day!
These have become standard fortnightly cook up in our house. Thanks very much my adult kids love them
