Ingredients
- 150 gramsof Tasty Cheddar cheese
- 2 eggs
- 150 gramsof Bacon (economy is fine)
- 350 gramsof Self raising flower
- Cayenne pepper to taste (.5 to one teaspoon)
- 2 spring onions
- 250 gramsof Milk
- Olive oil

Grate cheese in thermomix 3 seconds speed 8 add spring onion and process for another 3 seconds on speed 6. Set aside.
Chop bacon in thermomix for 5 seconds speed 5. Check there are no big chunks left, chop longer if needed.
Cook on veroma for 3.5 minutes speed soft.
Add milk followed by remaining ingredients. Add 20 grams to 50 grams of olive oil depending on how much bacon fat is there. The fattier the bacon the less oil needed.
Mix for 4 seconds on speed 4 till just combined.
Bake for 20 to 25 minutes at 180 degrees C

Great recipe and easy to make, I topped with some grated Parmesan cheese. Thanks for sharing I have made a couple of times now, perfect.
Really enjoyed these. I didn't have spring onions so added half a brown onion and chopped and cooked it with the bacon. I also added corn and sundried tomatoes. The mix made 15 good sized muffins.

Easy recipe, very tasty, have made them several times. I add in some fresh chopped rosemay instead of the cayenne..

I made these for school lunch boxes and the kids loved them, thanks. I use 150g of colby cheese and 30g of parmesan. I also added 100g of frozen corn to the bacon after cooking, which helped cool down the mixture before adding the rest of the ingredients so that the baking powder wasn't activated too early. However, I found the recipe difficult to follow, almost left out the eggs and did leave out the cheese. I had to scrape the mixture out of the muffin pan and remix to add the cheese, which I found it sitting on the bench just after putting them in the oven. So I may create a varaint with my ingredient changes and write out the recipe in more detail to protect me from myself.
